Callaloo and Salt Mackerel served with Boiled Dumplings


Hey guys. So today I will be sharing an original Jamaican recipe with you. This recipe is an easy and quick one so I hope you enjoy and basically am not saying that this is the right way but this is how I prepare the meal. Ingredients 
Callaloo
Salt Mackerel or Salt Fish
Flour
Carrot
Sweet pepper
Scotch Bonnet Pepper
Onion
Escallion
Thyme
Tomato
Garlic
Black Pepper
Salt
Oil

Method: Steamed Callaloo and Salt Makerel

1. Wash Callaloo leaves in salt water
2. Chop Callaloo into small pieces
3. Put salt mackerel/ salt fish to boil so as to take away salty taste
4. Drain water from the salt mackerel and debone into small pieces
5. Dice onions, escallion, garlic, tomatoes, thyme, pepper, sweet pepper and carrot
6. Heat oil in skillet or sauce pan
7. Sauté chopped vegetables and salt mackerel in oil for about 5 mins.
8. Add the chopped Callaloo to the sauce pan
9. Add a sprinkle of salt and black pepper for flavour
10. Add a small amount of water to the sauce pan
11. Finally, cover the saucepan and let it steam/ cook for about 30 minutes.

Method: Boiled Dumplins

1. Add a pinch of salt to flour in a bowl
2. Add water to the mixture
3. Knead the flour until dough is of a firm consistency
4. Put water to boil in a pot
5. Add salt to taste to boiling water
6. Tear dough into handful sized portions and press until a round ball-like shape is acquired
7. Add ball-like portions of dough into boiling water
8. Cover the pot and let boil for about 30 mins or until the dough is properly cooked.
